2 liters of water 397 grams of condensed milk 24 sheets of gelatines OR 20 grams of agar-agar 2/3 cup of cacao powder
Put 24 gelatine sheets in a bowl of cold water and let it soften.
Mix water, condensed milk and cacao powder all together and bring it to boil (don't forget to stir it during the process). When it starts to boil, turn the heat down immediately.
Take the gelatines out of the water and put it into the warm pudding mixture and let it dissolve. Keep stirring.
Once the gelatines dissolved, turn the fire off and you can transfer pudding mixture into a bowl or any other moulding you like. The only thing you have to do now is let it cool.
In my experience, gelatines takes longer to set compared to agar-agar.
Tip: once the pudding cooled down, you can put it in the freezer to speed up the setting process. Check every 30 minutes to make sure it's not frozen.
Silky milk sauce
200 grams of condensed milk 800 ml of water 2 tbs of flour
Dissolve 200 grams of condensed milk, 2 tbs flour into 800 ml water. Make sure there is no (flour) lumps in it. Turn the fire into a medium heat and keep stirring until the mixture start to thicken. Once it starts to boil, take it of the fire. Let it cool.
I normally pour all the milk sauce on the top of the pudding after it has already been set.
----------------------------------------------------------------------------- We are a family of 4, but my youngest son and I are lactose intolerant. So I have a the same recipe using lactose free milk. Using other kinds of milk is possible but might change the flavour. Here's the recipe for that...
2 liters of chocolate milk flavour (or oat base, soy base or even almond base). 20 grams of agar-agar powder (my favourite ingredient, healthy and success guaranteed.) 1/3 cup extra chocolate powder (i like it when I can really taste the chocolate). 1/3 cup extra sugar or other sweetener (optional).
Mix 2 liters chocolate milk and 20 grams of agar-agar and bring it to boil. Keep stirring the whole process. Once it's boiled take it off the fire. Pour the mixture into a bowl or any other moulding you like. Wait until it's cooled down before you can put it into your refrigerator. When using agar-agar, it doesn't take a long time to set.
Silky milk sauce: 1 litre Oat-, soy-, or almond base milk (regular). Add extra sugar/honey in this receipt. I used 1 cup of sugar 2/3 cup of flour.
Put 1 litre milk, 1 cup of sugar and 2/3 cup of flour together in a pan. Make sure there is no flour lumps. Warm it up on a medium heat until it starts to thicken. Keep stirring until it reached boiling point, then turn the fire off. Wait until it's cooled down before you can pour it on top of the pudding that has already been set.
